Cereal grains such as rye, barley, and wheat have a protein-rich layer of cells called the aleurone which surrounds the starchy endosperm tissue. During germination, cells in the aluerone secrete a range of hydrolytic enzymes, including α-amylase and proteases, which are involved in the hydrolysis of carbohydrate and protein stored in the endosperm.
