When sucrose undergoes hydrolysis it gives glucose and fructose. Now, The specific rotation value of Fructose(invert sugar) is more than glucose due to which the solution is laevorotatory. So, the initially dextrorotatory sucrose converts to laevorotatory mixture on hydrolysis, the net result is that inversion of optical activity occurs and the phenomenon is called invert sugar.
