Describe briefly the process of fermentation.

Incomplete oxidation of glucose into ethyl alcohol & CO₂ (or) Lactic acid under anerobic
conditions is called fermentation.
Alcoholic fermentaion :
* In yeast pyruvic acid undergoes decarboxylation and reduction and formes ethyl alcohol and CO₂ in the presence of the enzymes pyruvic decarboxylase, alcoholic dehydrogenase.
Lactic acid fermentation :
* In bacteria pyruvic acid form to lactic acid use of enzyme lacticdehydrogenase.
