The neurons of the olfactory epithelium extend from the outside environment directly into olfactory bulbs of the brain. Each olfactory receptor cell is a bipolar neuron with an exposed dendrite covered with olfactory cilia and an axon that projects through the cribriform plate and ends in the olfactory bulb. The chemical senses of gustation and olfactory are functionally similar and interrelated. Both involve detection of dissolved chemicals. Olfaction and gustation both contribute to the perception of flavours. Flavour is a combination of taste, smell, and texture.
