The way yeast uses glucose depends on oxygen availability. With oxygen, yeast performs aerobic respiration, producing lots of energy. Without oxygen, it switches to fermentation, producing alcohol and less energy.

Aerobic Respiration (Oxygen Present)

Process: With oxygen, yeast carries out aerobic respiration, a very efficient energy-making process.
Inputs: Glucose (sugar) + oxygen.
Outputs: Carbon dioxide, water, and a large amount of ATP (energy).
Energy Yield: High—this pathway makes much more ATP compared to fermentation.

Fermentation (Oxygen Absent)

Process: Without oxygen, yeast uses anaerobic fermentation.
Inputs: Glucose (sugar).
Outputs: Ethanol (alcohol) + carbon dioxide.
Energy Yield: Low—produces far less ATP than aerobic respiration.
Purpose: Even with less energy, this pathway helps yeast keep growing quickly when oxygen isn’t available.

The Metabolic Switch

Yeast species like Saccharomyces cerevisiae can use both respiration and fermentation (they are “facultative anaerobes”).
Oxygen levels decide which pathway the yeast follows.
