India is the second largest producer of sugarcane in the world. The largest sugarcane-producing state of India is Uttar Pradesh. Sugarcane was originally cultivated in “New Guinea'' around 800 BC. Then, the knowledge about sugarcane moved from there to Southeast Asia until it reached India. It was in India that the first organized production of sugar began during the middle of the 1st millennia BC. Initially, the extraction of sugar from sugarcane was done by chewing and extracting fluids with the help of water, but in the fifth century AD, Indian chemists found a way to crystallize extracted sucrose. With the help of this great discovery, sugar became a valuable trading item of India, and sugarcane also started spreading across Asia and the Middle East. And at present sugarcane has become the world’s largest crop.
