Oil and water do not mix so the mixture will separate into 2 layers. Cooling oil is less dense than water, will float on top of the water and can be carefully poured off. The process is called decanting. To get better separation, chemists use a separating funnel. This glass funnel is similar to a filter funnel but has a tap at the bottom. When the tap is opened, the lower layer can be run off first.
