When combined with sodium hydrogen carbonate, it produces sodium ethanoate, carbon dioxide, and water. Effervescence is caused by the release of carbon dioxide. This compound on reaction with sodium bicarbonate gives brisk effervescence and the reaction is as follows:
CH3COOH + NaHCO3 → CH3COONa + CO2 + H2O
