In 1822, Louis Pasteur discovered the process of pasteurisation which prevents milk from spoilage during the storage phase. Pasteurization involves the boiling of milk at 72 °C, for 15 seconds. Fresh milk has to be boiled so that all the microorganisms are killed and it becomes safe to drink and store. The boiling of milk is a physical change as no new substance is formed and chemical properties of  ilk are not altered.
