Pouring acetone on the palm gives a cooling sensation, and is an example of evaporation. Evaporation is the process of changing the state from liquid to vapour. When poured on the palm,  acetone absorbs heat from our palms and rapidly evaporates leaving a cooling sensation. This is due to the fact that to change from liquid state to vapour state, it requires latent heat of vaporization. Acetone takes this heat from our hand because our body temperature is high. The hand loses heat and we feel a cooling sensation.
