Swiss cheese is a type of cheese known for its distinct large holes. The holes in Swiss cheese are formed by bacteria that produce carbon dioxide (CO₂) as a byproduct of their metabolism. During the cheese-making process, these bacteria are added to the milk along with a starter culture of lactic acid bacteria. As the cheese matures, the bacteria produce CO₂, which gets trapped in the cheese and forms the characteristic holes.
