The rancidity of food items can be prevented by anti-oxidants, flushing nitrogen gas and refrigeration in air tight containers.
Rancidity can be defined as the aerial oxidation of oils and fats in food items kept for a long time leading to development of unpleasant taste and odour. This makes the food items unfit for consumption. Spoilage of food by rancidity can be hindered by adding anti- oxidants such as BHA and BHT to food items. Packaged foods rich in oil and fats, such as chips are flushed with nitrogen gas instead of oxygen gas because nitrogen is unreactive. To protect food from becoming rancid for a longer time, they should be kept at low temperature in properly air tight containers.
