1. Oca (Oxalis tuberosa)

A plump Andean tuber, oca is shaped like a small potato but with cropped up in bold yellows, pinks, and oranges. It is rather tangy, lemony in taste, and is usually roasted or boiled.

2. Yacon

Yacon is native to South America and resembles a potato, but is sweet and juicy - almost like a pear. It is crunchy, refreshing and even raw can be consumed.

3. Chinese Artichoke (Crosne)

This grub-like curly root is crunchy and has a nut-like mild distinctive taste. Crosne was originally introduced in China and it may be stir-fried or pickled and served as a gourmet twist.

4. The Jerusalem artichoke (Sunchoke)

Like the name suggests, however, there is nothing to do with artichokes about it. Sunchokes are knobby sweet roots of a sunflower and they can be roasted, mashed or simply, they can be eaten raw.

5. Lotus Root

This is a beautiful vegetable that grows submerged in water but the root remains in the ground. It is cut into a snowflake pattern similar to nature. The lotus root tastes crispy and is utilized in Asian cuisines by making soups, stir fried, and snacks.
