→ They are divided two types
1) Oil in water : (o/w)
Dispersed Phase = oil
Dispersion medium = Water.
Ex: Milk
2) Water in oil types : (w/o)
Dispersed phase = water
dispersion medium = oil
Ex: Butter
Applications:
1) Milk is an emulsion of fat in water. It is an important constituent of our daily diet
2) Cosmetics, Ointments, Lotions, hair dyes etc. are in the form of emulsions
