The three phases of gastric secretion are cephalic phase, gastric phase, and intestinal phase.

1. Cephalic Phase

This phase begins before food enters the stomach. The sight, smell, or thought of food stimulates the brain to send signals that increase gastric juice secretion.

2. Gastric Phase

This phase starts when food enters the stomach. Stretching of the stomach walls and the presence of proteins stimulate cells to release gastric juices rich in hydrochloric acid and pepsin.

3. Intestinal Phase

This phase occurs when partially digested food enters the small intestine. Hormones regulate and slow down gastric juice secretion to allow proper digestion and absorption in the intestine.
