Saliva is a complex mixture of water, electrolytes, mucus, and enzymes. The salivary glands in the mouth secrete saliva. 

Saliva aids in the moistening and lubrication of food as well as the initiation of the digestive process by breaking down carbohydrates with the action of the enzyme amylase. 

Furthermore, saliva contains antibacterial agents that aid in the cleaning of the mouth and the prevention of the growth of harmful bacteria. 

In the mouth, there are three pairs of major salivary glands: the parotid glands, the sublingual glands, and the submandibular glands. Each of these glands has a distinct composition and function in saliva production and secretion.
