In grasses, certain adaxial epidermal cells along the veins modify themselves into large, empty, colorless cells. These are called bulliform cells. When these cells in the leaves receive water and become turgid, the leaf surface is spread out. When they become flaccid due to water stress, make the leaves curl inwards to minimize water loss by hiding the stomata.
