Proteins are a class of biologically important compounds having high molecular weight. They contain long-chain polymers of α-amino acids and are constituents of cells. They contain carbon, hydrogen, nitrogen, oxygen, and some amounts of phosphorus and sulphur.

Millon’s test is given by proteins containing phenolic amino acids.

When a solution containing protein is treated with Millon's reagent a white precipitate is formed, which on boiling turns brick-red in colour. This brick-red colour confirms the presence of proteins.
