Salivary enzymes are the enzymes in saliva that begin the process of digestion of food. Saliva has the starch digesting enzyme or amylase, ptyalin, known as salivary amylase. It acts on the starch contained in the eaten food and converts them partially to sugar. This partially digested starch is further acted upon by the digestive enzymes in the stomach, pancreas, and small intestine for complete digestion. The pancreatic amylase acts on starch in the small intestine. It is secreted by the pancreas and poured into the small intestine through a small channel. Protease acts on proteins, and lipase acts on fat.
