Why nitrogen is flushed into the bags of chips while manufacturing?

The chips manufacturer uses nitrogen gas to flush the chips bags to prevent the chips from getting oxidized in the presence of oxygen from the atmosphere. When fats and oils are oxidized, they become rancid, and their smell and taste change; hence, chips are flushed with nitrogen gas, as nitrogen is an inert gas that prevents food oxidation.
