In alcoholic fermentation, the incomplete oxidation of glucose is achieved under anaerobic conditions by sets of reactions where pyruvic acid is converted to CO2and ethanol. The enzymes, pyruvic acid decarboxylase and alcohol dehydrogenase catalyze these reactions.
