In alcoholic fermentation, the incomplete oxidation of glucose is achieved under anaerobic conditions by sets of reactions where pyruvic acid is converted to ${CO}_{2}$ and ethanol. The enzymes, pyruvic acid decarboxylase and alcohol dehydrogenase catalyze these reactions.
