The digestion of carbohydrates begins in the oral cavity itself due to salivary amylase in the saliva. This amylase is deactivated in the acidic environment of the stomach. The gastric amylase in stomach has very limited role in carbohydrate digestion. Pancreatic amylases, intestinal amylases and disaccharidases start acting on the carbohydrates again in the duodenum.
