Nuclease is secreted by the pancreas. Intestinal glands secrete nucleotidases and nucleosidases. Gastric glands secrete small amounts of gastric lipase. Brunner’s glands secrete an alkaline mucus (mucus containing bicarbonate) that helps neutralise gastric acid in the chyme. Alpha amylases begin the process of starch digestion by splitting alpha 1→ 4 glycosidic linkages. Both salivary amylase and pancreatic amylase are alpha amylases. The Brunner’s glands secrete alkaline mucus (containing bicarbonates). It helps neutralize the acidic chyme thus protecting the intestinal mucosa and provides an alkaline medium for enzymatic action. The mucus also lubricates the passage of food.
