Whereas the molecules of water are polar which means positively charged at one end and negatively charged at another but oil has non-polar molecules. Therefore they do not mix together. Polar molecules dissolve in polar solvents and non-polar molecules dissolve in non-polar solvents. As far as sugar, salt, and lemon juice are concerned they have polar molecules therefore they dissolve in water
