Because when these anhydrous copper sulphate crystals are brought in contact with water, the particles of copper sulphate lose the attraction between their particles and start moving continuously and get mixed up with water. They absorb the water molecules as water of crystallisation, and the colour changes to blue. The copper sulphate has a blue colour and is called hydrated copper sulphate.
