Recombinant chymosin a dairy enzyme that produced through biotechnology. However it used as a cheese-making enzyme to help coagulate milk and produce cheese. It made by genetically engineering bacteria to produce the enzyme.

    Coagulation of Milk

    • When milk heated, the proteins inside the milk start to coagulate.
    • Coagulation is the process of proteins coming together to form a solid.
    • The proteins that coagulate in milk called casein proteins.
